Ten Minutes From the Distillery, a Lifetime on the Farm

Yadao was born in Kalaheo, the same town where Kōloa Rum is made. He grew up on his family’s farm, tending cattle and growing vegetables.

That childhood matters more than it sounds. Rum starts as a crop, and Kōloa says its rums are made with pure cane sugar and rainwater from Mount Waiʻaleʻale. Someone raised around growing things tends to take an ingredient list personally.

Blending is where a spirit’s personality gets shaped, and it rewards a patient palate. Today he oversees distillery operations, guiding the team and the production process.

Kōloa Rum Flavors: Where the Farm Shows Up in the Glass

Here is my favorite part. Kōloa partners with local farms for the coffee beans, cocoa, and coconut in its flavored rums, per the company. The lineup reads like a farm stand: White, Gold, Dark, Spice, Coconut, Cacao, Coffee, Aged, and Cane Fire Hot Cinnamon.

Start with the Coffee. Serve it cold over one large ice cube and expect roasted, bittersweet notes, the kind that want a slice of dark chocolate cake on the side.

Next, the Coconut and the Cacao. Pour the Coconut chilled with a wedge of fresh pineapple, so the creamy sweetness meets a little acid. Then pour the Cacao beside it and go back and forth. Cocoa should lean deep and dry, coconut soft and round, and each makes the other taste better.
