Second Course: Dry Chili Rubbed Salmon with Vermouth and Tarragon Beurre Blanc over Baked Fennel paired with Pear & Cardamom Collins featuring GREY GOOSE La Poire Vodka Stirred with Cardamom Syrup and Fresh Lime Finished with a Pear Slice
